Crafting the Campo Blend

Los Poblanos’ longstanding partnership with Albuquerque-based Cutbow Coffee is the result of a focused collaboration between our culinary team and master roaster Paul Gallegos. Together, we worked to source, blend and roast what is now served daily across the property: Campo Blend Cutbow Private Reserve.

The collaboration is defined by a deliberate, hands-on approach. With more than 30 years of roasting experience, Paul Gallegos brings an artisanal, old-school methodology to his work, calibrated specifically to New Mexico’s dry climate and guided by a full-sensory evaluation process. Prior to founding Cutbow Coffee, he personally batch-roasted over 70 million pounds of coffee for Peet’s Coffee, contributing to the evolution of American craft roasting standards.

Campo Blend reflects this shared commitment to quality and consistency. This medium roast coffee combines Latin American and Indonesian beans to produce a balanced cup with sweet, earthy depth, hints of nutty chocolate and notes of marzipan and molasses. Each batch is cupped and tasted to ensure quality and consistency throughout the roasting process.

Brewed daily at Campo and available in all guest rooms, Campo Blend Cutbow Private Reserve is available for purchase at the Farm Shop, Town & Ranch, Farm Shop Norte and online.
