About Los Poblanos

Historic inn and organic farm

Established in 1934, Los Poblanos is family-owned and operated and encompasses a 25-acre organic farm, historic inn, restaurant, spa, cultural events center in the heart of the Rio Grande Valley. Our artisan product line includes lavender bath and body products, Farm Foods and Botanical Spirits – all developed from the botanicals growing on the farm, a field-to-fork culinary model and relationships with local farmers and makers. Los Poblanos products play an important role in cultivating a dynamic business dedicated to sustainable architecture, hospitality, historic preservation and community.



History

Designed by the region’s foremost architect, John Gaw Meem, the “Father of Santa Fe Style,” Los Poblanos is one of the Southwest’s most magnificent historic properties. Originally a model experimental farm in the 1930s and 1940s, guests can still explore the original greenhouse, dairy barns and iconic architecture. Today, the agricultural fields are home to rows of organic lavender, fragrant botanicals, fruit trees and vegetables, all cultivated as part of our regenerative farming practices.

Los Poblanos is home to Campo, our award-winning restaurant and bar showcasing Rio Grande Valley Cuisine rooted in seasonal organic ingredients from our own fields and from generations-long relationships with local farmers and herdsmen. Guided by the daily harvest, our menus evolve with the seasons and honor the foods indigenous to New Mexico’s Rio Grande Valley. This commitment extends to the bar, where cocktails draw on fresh organic produce, house-made components such as lavender simple syrup, bitters and amari, and small batch barrel-aged spirits including our own botanical gin, creating a dining and drinking experience deeply connected to the land.
