The Farm Shop and Bakery
Our flagship Farm Shop is set within a beautifully renovated historic dairy barn beneath our original 1934 silos. The experience reflects the remarkable sense of place found in this corner of the Rio Grande Valley. Inside, you will find Los Poblanos signature lavender products, our Farm Foods pantry collection, artisan baked goods from the onsite bakery, and products straight from the Campo kitchen.

Artisan lavender products
Crafted with care in small batches, Los Poblanos artisan lavender products carry a deep sense of place. Grown on our family-run organic lavender farm and rooted in the agricultural history of our boutique inn, each product reflects the landscape and heritage of the Rio Grande Valley.
Our fields are tended by hand and harvested at the optimal time in mid summer to capture peak oil quality. The lavender is distilled
on-site using traditional Portuguese copper alembic stills, yielding pure essential oil that forms the foundation of our signature products.

Supporting makers and the local community is at the core of our mission. The Farm Shop represents the work of many talented artisans whose work enriches the Los Poblanos community. Over the years, we have formed lasting friendships and collaborations with local and international artists who share our devotion to thoughtful production.
Whether developing collaborations with local coffee roasters or wheat farmers, introducing a new ceramicist or featuring a jewelry studio we admire, we are committed to nurturing relationships grounded in creativity, respect and long-term connection.
Bakery and coffee counter
The Farm Shop bakery counter is the perfect stop for fresh-baked pastries from croissants and scones to a warm loaf of bread, paired with a morning espresso drink, a cup of tea or a glass of wine later in the day. Enjoy a midday sandwich or a simple snack to enjoy while wandering the farm. The deli case features artisan cheeses, house-cured meats, local pickles and our signature lavender lemonades.
Whether preparing a picnic to enjoy on the property or selecting hosting necessities for a gathering at home, the Farm Shop bakery and pantry is stocked with simple luxuries that celebrate local agriculture and seasonal cooking.

From our bakery
The Los Poblanos bakery team approaches baking with equal parts artistry and technical precision. Each day they prepare small-batch breads, pastries, cookies and desserts for the Farm Shop and Campo.
In keeping with the Rio Grande Valley Cuisine culinary philosophy, the bakery relies on locally sourced, seasonal ingredients from our fields and trusted regional farmers. Bread is baked in a European steam-injected oven, which gives our French baguettes their thin crisp crust and tender interior. These arrive on the shelves throughout the day, still warm and ready to enjoy with sweet butter and Green Chile Jam.
Discover loaves such as green chile sourdough and Sonora wheat, or choose a flaky croissant or seasonal pastry on your next visit.
From our butchery
The Los Poblanos butchery program is a fully developed whole-animal operation sourcing from regional, family-run farms. This approach allows our culinary team to honor the entire animal, strengthen partnerships with local ranchers and elevate the craft of charcuterie on the farm.
Every cut and product reflects rigorous standards for quality. The meat is humanely raised, sustainably sourced and free of fillers, antibiotics and hormones. Check the freezer for signature sausages made with fresh regional ingredients, and find products such as bone broth, leaf lard and tallow in the refrigerated case.

Grown on the farm
We harvest the lavender by hand each summer and extract the essential oil through a traditional steam distillation process right on the farm, ensuring absolute purity.
Made by hand
Our artisan product line started with Los Poblanos owner and founder, Penny Rembe, who developed our signature Lavender Salve recipe over her kitchen stove after the the first lavender harvests.
Regenerative farming
A significant percentage of the property is dedicated to regenerative farming, a model driven by sustainability and stewardship of the land, ecosystem, culture and community.
