Our culinary team worked closely with artisan coffee roaster and local New Mexican, Paul Gallegos of Cutbow Coffee to create the perfect blend to sip over brunch at Campo or enjoy with a morning pastry. Our Campo Blend can be found in every room at our inn, poured in our tasting rooms, served at LP events, and is brewed fresh daily at the Farm Shop.

With over 30 years of roasting acumen, Paul’s artisanal, old-school method incorporates a full-sensory approach that is calibrated for New Mexico’s dry climate. Every batch is cupped and tasted for quality. 

This medium roast combines Latin American and Indonesian beans to create a balanced cup with sweet earthy depth, hints of nutty chocolate, and notes of marzipan and molasses.
