White Sonora Wheat Flour

White Sonora Wheat is a heritage grain with a rich agricultural history in the southwest. Originally cultivated by the Spanish missionaries in the 17th century, this drought-tolerant grain was a staple that produced the first flour tortillas. This heritage grain is a soft wheat with a rich, earthy and nutty flavor. It naturally has less gluten and higher protein content than conventional all-purpose flour.

Expert Tip: Sonoran White Wheat is best suited to tortillas, biscuits and cakes, but can be used in a variety of baked goods. When in doubt try starting half Sonoran White Wheat and half all-purpose flour. Try sifting Sonora White Wheat flour for a texture more like all-purpose.
