About this product

Some of life’s sweetest things come in threes. This raw, unfiltered honey is as pure as it gets. Our Mini Honey Trio celebrates the diverse landscapes and flavors of New Mexico. Crafted by a network of dedicated local beekeepers and their very busy bees, each jar captures the unique character of the season, from fields of wildflowers to backyard gardens in bloom.

Each trio includes three 3-oz jars, Lavender Honey, New Mexico Honey, and Red Chile Honey. Showcasing the naturally shifting flavors and colors of our high desert environment. None of our honey is pasteurized, and we never add sugar or preservatives.

How to use

Enjoy with fresh-baked green chile cornbread, as part of a charcuterie spread or drizzled over popcorn for a sweet and spicy treat.

For breakfast, top vanilla yogurt with Los Poblanos House-Made Granola, a drizzle of New Mexico Honey, and a pinch of crushed Culinary Lavender buds for a fragrant, balanced start to the day.

A special note on our honey.
Due to colder temperatures, the honey in your order may be crystallizing. This is completely normal for our raw, organic honey, but we understand that the change in appearance can be surprising. The honey is still safe to use and just as delicious!
To return it to a smooth consistency:
· Keep out of the fridge and store in a warm location.
· Place jar in a warm water bath or under warm running water.
We do not recommend heating the honey in the microwave or stove top. Our raw, organic honey is unfiltered, unpasteurized and free from additives and preservatives. Overheating will cause the honey to lose its key nutrients.

What started as small-scale salve, soap and lotion making to serve guests as room amenities at our historic Inn, has grown to include a robust line of products inspired by the Los Poblanos fields, guest rooms and kitchen. Our organic lavender essential oil is still distilled onsite at the farm and this historic agricultural land continues to be a source for ingredients and inspiration.

Grown on the farm

We harvest the lavender by hand each summer and extract the essential oil through a traditional steam distillation process right on the farm, ensuring absolute purity.

Made by hand

Our artisan product line started with Los Poblanos owner and founder, Penny Rembe, who developed our signature Lavender Salve recipe over her kitchen stove after the the first lavender harvests.

Regenerative farming

A significant percentage of the property is dedicated to regenerative farming, a model driven by sustainability and stewardship of the land, ecosystem, culture and community.
