White Sonora Wheat Berries

White Sonora Wheat is a heritage grain with a rich agricultural history in the southwest. Originally cultivated by the Spanish missionaries in the 17th century, this drought-tolerant grain was a staple that produced the first flour tortillas. Wheat berries are a delicious, nutritious and versatile addition to salads, soups or side dishes. They can be used as a substitution in any recipe that calls for rice, barley, couscous, bulghur and more to add diversity and texture to your meal.

Los Poblanos is proud to be working with the Southwest Grain Collaborative to support a renewed grain infrastructure for New Mexico and revive traditional heirloom grains through regenerative organic farming. Find seasonally updated recipes and all of the current available grains on the Heirloom Grain Collection Blog.

Expert Tip: You can soak White Sonora Wheat Berries overnight to soften and reduce cooking times, but it is not necessary for good results.
