Cutbow Coffee Roastology is the culmination of more than 25 years of experience by artisan coffee roaster and local New Mexican, Paul Gallegos. He has personally batch-roasted over 70 million pounds for Peet's Coffee, one of the pre-eminent craft coffee roasters in the US. Every batch he roasts reveals his exemplary skills and every cup you enjoy is proof of his passion for great coffee.
With their own coffee house located down the road from Los Poblanos, Cutbow Coffee can be found in every room at our inn, poured in our tasting rooms, served at LP events and is brewed fresh at the Farm Shop daily for a quick morning coffee and pastry combo.
A portion of Cutbow's proceeds from every bag sold is donated to the Hermit's Peak Watershed Alliance, working to assure quality water for future generations of the people and wildlife of New Mexico. Cutbow Coffee is named after the cutbow trout in memory of Paul's father, an avid fisherman who taught his children the importance of patience, perseverance and early mornings of hard work.
